It’s all about the kitchen here, with the key seats being the twenty three that are arranged around a U-shaped bar that allows diners to watch their meal being prepared. For the paranoid or OCD in all of us, getting to see the clockwork precision that goes into dishes such as la caille farcie de foie gras and agneau en carré doré turns eating into entertainment. Since dining in Vegas has taken a turn towards the high roller, maybe the best thing about this spot is that for the, er, medium roller, who wants the Robuchon experience, there’s also tapas style small plates on the menu.
