Because it's just nice to have the setting of a Big Dining restaurant but with simpler things like a nice cheese plate and a good wine list. Sorry to Tom Colicchio, but why go to Craft next door when you can have craftbar, much more creative and lower key right next door, minus the James Beard feeling.
