When Robin Leigh (along with partners Michael Callahan, Jean-Marc Houmard and Huy Chi Le) wanted to take Thai to a world-class, gourmet status, he found himself sourcing the world over. From Bangkok came celebrity chef Ian Chalermkittichai (known for being former executive chef of the Four Seasons hotel in Bangkok, as well as his work at Darley Street in Sydney and for his weekly cooking show, Chef Mue Thong) and from Paris came uniforms by Thai fashion designer Chomwan Weeraworawit. In the 130 seat space designed by The Rockwell Group, expect a complete glimpse into Chalermkittichai's homeland through dishes such as Pandanus Red Snapper, Florida Pompano with curry custard, white cabbage and horapa sweet basil, Wok- seared Manila Clams and Roasted Bangkok duck. At lunch, simpler dishes such as a steamed chicken bento box showcase the kitchen's expertise with subtle flavours and delicate usage of spices and make little dent on the wallet. Though all about the food, it also doesn't hurt that Kittichai has already hosted such events as Dior's launch of Pure Poison, Kal Ruttenstein's birthday party and Alek Wek's handbag launch.
